Healthy "Green" Quesadilla


With last weeks CSA www.grantfarms.com veggie crop (image above) I was given plenty of fresh organic spinach, kale, swiss chard, lettuce, peas, green onions, cilantro, dill, radishes, zucchini and beets.
I was craving mexican so I made the following healthy, yummy vegetable quesadilla:

"Green" Quesadillas (serving size 2):
  • Handful or two of Greens, lightly chopped (you can use whatever you have on hand - I used Spinach, Kale and Swiss Chard)
  • 1/4 cup of corn
  • (optional) 1/4 cup of zucchini
  • 1/4 Red Onion, sliced really thin
  • 1-2 small Potatoes, cut up in very small cubes or dices
  • 1/4 cup of Feta
  • Wheat Tortilla (we also used a green onion tortilla, use healthy tortillas that have no full or partial hydrogenated oils and check the carb the lower the better)
  • 1-2 tbsp of Olive oil or other healthy oils (you can also try grapeseed oil)

In a medium/large sauce pan, warm the pan, place the oil in (sprinkle a little with salt it will cut down some on the splatter), then saute the onions for a few minutes then add the small diced potatoes. Cook on low to medium until onions and potato have softened (5-10) but watch the onions you don't want to burn them. Then add the greens, corn, zucchini and salt/pepper, stir around to warm up these last vegetables. After 5 minutes, take the veggies off and place in another dish/bowel. Get your tortillas, take one and sprinkle a few pieces of feta, then spread some of the veggie mixture on top, a little more feta then the 2nd tortilla. Place in a warmed (lightly oiled) pan....warm on both sides until feta is melted. Do the same for your 2nd quesadilla. Slice up the quesadilla and eat with some fresh salsa or guacamole. Enjoy!

I wanted to talk a little more about tortillas. There are so many different varieties but you have to be careful about what you buy. If you go in the major grocery stores like King Soopers, Safeway, Krogers, etc...almost all of the typical flour tortillas have some bit of hydrogenated oils. Even though they might say they are "trans-fat free", if you read the list of ingredients you'll most likely see some partial or full hydrogenated cottonseed or soybean oil as one of the ingredients. Try to find ones that are either organice or have a smaller list of ingredients, the smaller the list the better. There are also now several brands out there that are sprouted tortillas with flax seed or other healthy tasty choices.
